Organic Valley family of Farms has added Organic Ricotta Cheese to its line of delicious, award-winning cheeses. The cheese is the first organic ricotta in nationwide distribution.

Available in 15-ounce recyclable plastic tubs, the creamy white, soft cheese features a slightly sweet flavor. Like traditional Ricottas made by "old world" cheese-makers in Italy, Organic Valley's ricotta is firm, not solid, and consists of the most delicate, moist curds.

Ricotta literally means "re-cooked" and was originally produced from the whey remaining after cheese-makers produced Mozzarella and Provolone. Organic Valley uses a similar, time-honored approach. It reheats organic whole and non-fat milks to very high temperatures. At the critical moment, organic vinegar is added to form the curds.
