A couple of years ago, we became aware that the enzymes listed on the Organic Valley Blue Cheese Crumbles ingredient list were not specific. At that time, the label for the Blue Cheese Crumbles was updated to list both microbial enzymes and animal enzymes under the ingredients.
The microbial enzymes are used to coagulate the milk to form cheese. The animal lipase is used in creating the flavor profile for the blue cheese crumbles.

It's true, Wendy, this product does contain animal rennet, as do our Vermont Cheddars and our Italian Blend Shreds. However, ALL other OV cheeses use microbial enzymes rather than animal rennet to meet the dietary needs of vegetarians.
