Hi Joel! The organic gums in our cottage cheese are polysaccharides produced by fermented sugars. These gums are added to thicken and stabilize our cottage cheese which allows us to ship our product nation wide. We've found without a stabilizing/ thickening agent, our cottage cheese would begin to separate making the product watery and undesirable. In an effort to use only organic ingredients, we choose to use the organic guar gum and organic locust bean gum you have referenced. Thanks for the note. I also tried Organic Valley and it was the worst cottage cheese I have ever tried. Organic doesn't mean tasty. I had to throw it away. It was inedible. I hate wasting my money.
