Thanks for your comments. Perhaps you'd prefer our traditionally pasteurized heavy whipping cream without carrageenan. Your local retail store should be able to order this for you, if they don't carry it already.

Thanks for the note. We offer our heavy whipping cream in two versions: traditionally pasteurized, which has no carrageenan, and ultra-pasteurized, which contains carrageenan. Perhaps you'd prefer our traditionally pasteurized cream without carrageenan. Your retail store should be able to order this for you, if they don't stock it already.
The reason we add carrageenan to our ultra-pasteurized cream is so that it can reach its long shelf life while maintaining its integrity. Without carrageenan, the cream would not only begin to separate, but the fat portion would become solid (i.e. butter). Even with shaking, this layer would most likely not break apart or go back to its liquid form.

Organic Valley offers its heavy whipping cream in two versions: HTST pasteurized, which has no carrageenan, and ultra-pasteurized, which contains carrageenan. The ultra-pasteurized version has a longer shelf life, so carrageenan is added to help keep the cream from separating. If you personally prefer to avoid carrageenan, look for our "pasteurized" heavy whipping cream; your retail store should be able to order it for you if they do not have it in stock.

I love your pastured whipping cream! Went to the store to purchase some yesterday, and only had the option to buy the ultra-pasteurized variety. It was very disappointing, and I chose a non-pastured, non-ultra pasteurized local whipping cream instead. Why do you offer two options? It seems like vat pasteurized, pastured products are the cream of the (pasteurized) crop, so why not offer only the superior product? It seems strange to me that you would ultra-pasturize pastured dairy products! Also, the non-ultra-pasteurized variety is not available in the 8 oz size, which is all some stores carry. Please consider changing all your pastured products to vat-(not ultra!)pasturized. Thank you.

Carrageenan is made from seaweed, and we use only undegraded, food-grade carrageenan in our products. The USDA included carrageenan as an acceptable ingredient for organic products in the National List of Allowed and Prohibited Substances. This list is recommended to the USDA for approval by the National Organic Standards Board. If you personally prefer to avoid carrageenan, look for our "pasteurized" heavy whipping cream; your retail store should be able to order it for you if they do not have it in stock.
