Buttermilk

Buttermilk, Lowfat 1%, Pasteurized, 32 oz

Organic Valley's buttermilk is enjoyed by many as a nutritious beverage with an old-fashioned flavor. Buttermilk is also wonderful for baking, lending a rich, hearty flavor and light flaky texture, with fewer calories than whole milk or cream. It is a great base for creating soups or salad dressings, and it makes an effective and flavorful marinade because of its high acidity. Buttermilk is often used to coat poultry and fish before frying or baking. The tangy flavor of buttermilk goes well with sweet fruits and desserts, as well. The name is deceptive because it contains no butter, and is actually a low fat dairy product. Buttermilk is an excellent source of calcium and riboflavin, and a good source of potassium and vitamin B12. A diet containing naturally fermented foods such as buttermilk, yogurt, sourdough breads, sauerkraut, and pickles provide enzymes which operate in the digestive tract to enhance digestibility of and assimilation of nutrients from food.

If I can be assured there is no egg product in any way possibly in the buttermilk at any time of year, you have a consistent customer. I have not found any other organic buttermilk and I love it for drinking and cooking.
Tracy at Organic Valley

Hi Louise - Great news, Organic Valley Buttermilk does not contain any egg products at anytime of the year. In efforts to be truly transparent, we list all of our ingredients on the label. So, sit back, relax, and enjoy our delicious buttermilk!

I am still confused by the answers here. I want to know if this product, as it comes off the shelf, has active live cultures? I understand that it is made by culturing milk, but this doesn't say whether it has active live cultures when purchased and there is nothing on the label to indicate this, as is done with yogurt. I wish to make some home-made cheese and need the live culture and keep having to purchase regular grocery store non-organic buttermilk because your label neglects to be clear about this information. All of the other regular buttermilk varieties that I found clearly state that they contain active live cultures, so I do not understand why you do not do so, even on your web site.
Angie at Organic Valley

Hello, because we add the cultures after the milk is pasteurized, some cultures could still be viable in the product through its shelf life. However, we do not make claims about the levels of those live cultures at this time.

I have yet to see this at a store. Maybe I've missed it. Do the bigger chains in the Racine area carry it? Like Pick n save? Woodmans? I see your products in both places, and buy them!! But I've never seen the buttermilk.

For Pat from Middleton, WI: Willy St. Co-Op carries the OG buttermilk. They just opened a new store by you on University Av. I shop the Co-Op on the east side and they always have it when I shop.

Also, in general remarks, I would like a 16 oz. version of buttermilk, too, but I usually use it in pancakes, so I freeze what I do not use and it is fine for baking. Not sure about drinking it straight, though!
Thank you Organic Valley for such great products!

Alot of my "old" recepies call for whole buttermilk. I have searched all over in my area for it. Can you advise me as to where I might be able to get my hands on some?
Thank you

Have you considered offering your buttermilk in powder form? I use it in some bread making recipes.
Angie at Organic Valley

Hi Connie, We do offer a buttermilk powder! Check out our Buttermilk Blend!

What is the difference between buttermilk and kefir? Which one is the healthiest drink?
MP from Md. on November 16th, 2010
Thanks Angie, for the info!

I thought cultured buttermilk by definition had live active cultures. What I'd like to know is which particular lactic acid bacteria OV uses to culture their buttermilk.
Angie at Organic Valley

Hi MP, Our buttermilk is "cultured" with the live cultures Lactococcus lactis and Leuconostoc cremoris.

LeanJedi from Atlanta, GA on September 27th, 2010
Why is it that your buttermilk does not have active cultures? At least it does not list them as part of ingredients (unlike yougurt products which generally do)
