Hi John, We have been working for some time to secure a Fair Trade source for our cocoa. As of this month we are happy to announce that we are using Fair trade cocoa from the Dominican Republic, and our ingredients list will be updated to indicate this the next time we print packaging (later this year). We also have Fair Trade sources for our organic cane sugar, vanilla and nutmeg (for eggnog) as of last July. More about our Fair Trade ingredients here.
To answer your question directly, Vernon, our Soy needed a stabilizing agent. We chose to use carrageenan because it was simply the best available solution. We are in agreement that it might not be the perfect solution, but until the perfect solution presents itself, we have to go with the best available option.
Carrageenan is derived from seaweed. We use only undegraded, food-grade carrageenan in our products. The USDA included carrageenan as an acceptable ingredient for organic products in the National List of Allowed and Prohibited Substances. This list is recommended to the USDA for approval by the National Organic Standards Board.
