The probiotics in the pourable yogurt may be active past the expiration date but not at the level that we guarantee. We have done testing to confirm the counts and have determined the expiration date based, in part, on those figures.
We can not recommend the consumption of any product after the expiration date. The "fizz" is the result of the product beginning to ferment.
The Glycemic Index (GI) is not a measure of the number of grams per serving, but rather it is a measure of the effects of carbohydrates on blood sugar levels, a lower glycemic index suggests slower rates of digestion and absorption of the foods' carbohydrates. Foods are considered to be Low GI when they index below 55. The organic agave we use in our yogurt is mostly fructose, which indexes at 17— well below the 55 threshold and much lower than table sugar which indexes at 65.
For consumers concerned about minimizing their sugar intake, Organic Valley Plain Yogurt has no sugar added. It contains only the naturally occurring sugars from the cultured milk (11 grams of naturally occurring sugar per serving). Our Berry Yogurt is sweetened with organic agave, organic whole berry fruit puree and juice, which together add a total 15 grams of sugar per serving. While this is not a "low sugar" product, agave's naturally sweeter taste means that we are able to achieve the same taste with less sweetener (fewer grams of sugar) than if we were sweetening with cane or beet sugar.
