Ingredients
- 2 medium limes
- 3 pounds apples, peeled, cored and diced
- 2 large navel oranges, peeled and chopped
- 1 jalapeno pepper, seeded and minced
- 1⁄2 medium red onion, finely chopped
- 1⁄4 cup dried cranberries
- 1⁄4 cup seedless raisins
- 1⁄2 cup brown sugar, packed
- 1⁄4 cup apple cider vinegar
- 1 tablespoon crystallized ginger
- 2 tablespoons peeled and minced fresh ginger root
- 1⁄2 teaspoon sea salt
Prepare limes: grate 1 teaspoon peel and squeeze 2 tablespoons juice.
In a large heavy saucepan, heat lime peel, lime juice, and remaining ingredients to boiling over medium-high heat, stirring occasionally. Cook, uncovered, about 20 minutes or until thickened, stirring occasionally. Cover and refrigerate chutney until well-chilled, about 6 hours or up to 5 days.
