This is banana bread gone totally into the monkey zone….no added sugar…just the fruit!
Heat oven to 350 degrees F. Butter two 8x4-inch or 9x5-inch loaf pans; set aside.
In large bowl of electric mixer, beat bananas 2 minutes. Beat in cooled butter. Add 1 egg at a time; beat until well combined. Beat in vanilla.
In a medium bowl, combine flour, baking soda, cinnamon and salt. Gradually beat into banana mixture until well combined. On low speed, beat in walnuts if desired and dried fruit.
Spread batter into prepared pans. Bake 25 to 30 minutes or until golden brown and wooden pick inserted in center comes out clean. Transfer pans to wire cooling rack; let stand 10 minutes. Remove from loaf pans; cool. Slice and serve warm or at room temperature with cream cheese or additional butter.
Spread on some room-temperature butter or Organic Valley Cream Cheese for a great snack!
