Simple? Homey? Yes. And welcome at any potluck or family gathering. No pesticides, antibiotics or synthetic fertilizers are invited to this party, however, so choose organic ingredients for this pie. Feel free to substitute dried cranberries for the dried cherries.
1. Place a foil-lined baking sheet in the oven and heat oven to 375 degrees.
2. Beat the eggs and honey in a large bowl until smooth. Add cottage cheese, dried fruit, vanilla and salt and mix well. Pour the mixture into the pie crust stir the filling in the crust to evenly distribute the dried fruit. Sprinkle cinnamon lightly over entire surface.
3. Place pie on hot oven sheet and bake until filling is barely set in the middle, about one hour. Cool the pie completely on a wire rack. Serve it at room temperature.
