Here’s a not-too-sweet and very fitting complement to Flat Apple Pie, Apple Almond Crisp or most any apple cake or dessert. Freshly ground cinnamon really ups the flavor profile (use a coffee grinder or mortar and pestle to grind the cinnamon stick), but pre-ground cinnamon will also do the trick. Be sure the canister of your ice cream making machine is fully frozen before churning the mixture.
1. Prepare/freeze the insert of a large-capacity electric ice cream maker according to manufacturer’s instructions.
2. Combine all ingredients, stir until smooth, and then chill thoroughly.
3. Follow the manufacturer’s directions to churn the mixture. It will reach the soft-serve stage in about 20 minutes. For a firmer ice cream, transfer the soft-serve mixture to a plastic container, cover, and freeze it for 4-8 hours, or overnight.
