Super fun and crunchy, even green food phobic kids will try this exciting salad!
For the dressing:
Whisk mayonnaise, maple syrup, and vinegar in medium bowl to blend. Gradually whisk in oil until mixture thickens slightly. Season to taste with salt and pepper. (Dressing can be prepared 3 days ahead. Cover and refrigerate. Rewhisk before using.)
For the salad:
Toss greens, apples, cherries, 1/4 cup grated Organic Valley Baby Swiss Cheese and 1/4 cup walnuts in large bowl to combine. Toss with enough dressing to coat. Divide salad equally among plates. Sprinkle with remaining grated swiss and walnuts. Enjoy!
This salad is very satiating as it's super crunchy and contains fruit, greens, cheese and nuts. It's practically a meal in itself, and when the kids are tired of the same 'ol sandwiches, throw them a crunchy green salad surprise curveball!
Great with a light soup, Stonyfield Yogurt, or pretzels and dip!
Kids in the Kitchen:
Whisking is an exciting kitchen task that most 3-6 year olds love to do! The little ones can also wash the greens, measure the cherries (look out for the "nibble fairies"), and count the walnuts. Bigger kids can cut the apples (add lemon juice to reduce oxidation), and the Organic Valley Baby Swiss ("nibble fairies" may visit the cheese as well).
