Texas Organic Valley farmer Pat Tolson used to make this with her dad at family gatherings.
Mix sugar and cocoa together in a medium saucepan. Pour in milk gradually and stir. Bring to a low boil or simmer. Boil to a soft ball stage. Remove from heat and add butter and vanilla. Beat well. Just about when you think your arm will fall off, the fudge will begin to set up. Pour or spread into a buttered dish. (The spoon and the pan are a kid's favorite to clean up!) You can also mix in nuts if you like.
