Place a slice of lime, lemon or orange in each compartment of an ice cube tray, with one end of the slice extending above the tray about 3/4-inch. Fill tray with water and freeze until firm.
Place 2 cups plain ice cubes in a large glass pitcher or punch bowl. Add orange juice and cherry nectar; stir to combine. Gently stir in champagne, tonic water or sparkling water. Place a citrus ice cube in each of 12 champagne glasses or punch cups. Pour or ladle the "bubbly" mix over citrus-ice. Serve immediately.
