Preheat oven to 375°F. Place unbleached muffin papers into the baking tin.
In a large mixing bowl, sift together the flour, baking powder, soda and sea salt. Add oat bran (as it cannot be sifted well).
In a medium sized mixing bowl whisk together the eggs, honey, original soy, vanilla extract, and melted butter.
Add the egg and soy mixture (wet ingredients) to the dry ingredients and stir until well incorporated. The batter will be thick and somewhat lumpy.
Using a 1/4 cup measure and a rubber spatula, fill the muffin tins about halfway. Dunk strawberries in a bit of sugar and press one into each of the 12 muffin cups. Top with your favorite granola and pat gently (lovingly).
Bake in your preheated oven for 15-20 minutes or until the tester (fork or a bamboo skewer), comes out clean. Cool for 10 minutes or so on a baking rack prior to slathering with butter and munching.
Slather with softened butter and enjoy (watch out for the muffin paper).
