Herbed Breakfast Potatoes with Mild Cheddar

Savory seasoned potatoes with melted cheese, make a great side dish that's sure to please!


  • 10 red potatoes, diced small (medium-sized)
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon garlic powder
  • 34 teaspoon sea salt
  • 12 red bell pepper, chopped (medium-sized)
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon basil, crushed
  • 12 teaspoon ground black pepper
  • 12 cup Organic Valley Cheddar Cheese
  • 2 tablespoons fresh parsley (for garnish)


Preheat oven to 400 degrees.

Wash and dice potatoes. Mix with olive oil, herbs and spices. Spread evenly on a cookie sheet.

Bake for 30-40 minutes, or until desired crispiness. Flip potatoes around every 10 minutes for even browning.

Top with shredded Organic Valley Mild Cheddar. Turn the oven off and let the cheese melt over the potatoes. Garnish with fresh parsley.

Serving Suggestions

Great accompaniment to an Organic Valley Beef Patty, a Peasful Egg Salad sammy, or even the Crunchy Green Salad Surprise!


Top with different varieties of Organic Valley Cheeses: Pepper Jack, Mozzarella, Raw Sharp or Low Fat Farmer Cheese.


Kids in the Kitchen:

Parents may want to dice the potatoes, or offer assistance to the younger sous chefs as potatoes can be challenging to dice. Try preparing the potatoes, oil and spices ahead of time and place in a covered bowl overnight to marinate. Bake in the morning for sweet simplicity! "The cheese is the best part of all!
