I love to make this German-style breakfast hash on camping trips; it’s equally welcome at lunch or dinner.

Ingredients

  • vegetable oil
  • 23 cup chopped onions
  • 4-5 cups cubed, cooked potatoes
  • up to 1 cup chopped Organic Prairie Bacon (cooked), Hardwood Sliced Ham, or Hot Dogs
  • 4 Organic Valley Eggs, beaten with salt and pepper to taste
  • Organic Valley Baby Swiss Slices, cut into strips

Directions

1. Lightly coat bottom of cast iron skillet or nonstick frying pan with oil; heat on Coleman stove or your choice of grill (or stovetop). Add onions and saute them a few minutes, stirring often.

2. Add potatoes and bacon, ham or hot dogs. Cook, turning occasionally, until potatoes are browned.

3. Move mixture to outer edges of pan add a little more oil, let it heat briefly, then stir in eggs. Tilt and shake the pan to distribute the eggs and cook them, stirring once or twice, until they’re almost set. Distribute cheese over the mixture, cover pan for a moment or two to let the cheese melt, then serve immediately.

This sounds a lot like our traditional Potatoe and Egg tacos. My mom would put anything in a flour tortilla taco. Always on the go in my family. Of course you can put everything in your recipe. We make our flour tortillas from scratch. We call this the poor mexican mans meal. We were raised on this breakfast because we did not have much money. Its amazing that's what kept us all healthy in our home. We did not own a car until I was in the 11th grade so we walked to and forth from school and stores. My father had the ranch truck, but he would not use for personal use. Looking back we did not have so many disease or obesity as we do now. Still cook it at home now and days and we also can have for lunch or dinner. Yum, Yum.

My family has been eating this for years, we call it camp breakfast. Throw all the leftovers from grilling the night before while camping and you have a great breakfast. We add red or green peppers too!
