Monday Night Nachos!

Mix up your Monday night with this fun family dinner or festive football feast!


  • 1 pound Organic Prairie Ground Beef
  • 1 cup minced onions
  • sea salt & black pepper to taste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 tablespoon peeled and minced fresh garlic
  • 12 cup salsa
  • 13 cup water
  • 1 cup Organic Valley Mexican Shredded Cheese Blend
  • 1 cup Organic Valley Shredded Cheddar Cheese
  • 1 cup shredded lettuce
  • 1 cup seeded and chopped Roma tomatoes
  • 12 cup Organic Valley Sour Cream
  • 1 tablespoon cilantro (optional & highly recommended)


In a large heavy skillet pan, over medium-high heat, brown the ground beef for 2-3 minutes. Add the onions and continue to brown for 3 to 4 minutes. Stir in chili powder, cumin, and
garlic. Add the salsa and water. Bring the liquid to a simmer and allow to simmer for 2 to 3 minutes, or until the liquid reduces by half. Remove the pan from the heat and allow to cool slightly.

Lay your favorite tortilla chips on a large platter. Spoon the beef mixture over the chips and sprinkle cheeses over the meat. Top the cheese with lettuce, tomatoes, sour cream and cilantro.

Serving Suggestions

Serve with a refreshing micro-brew beer, lemonade spritzer, or a lime margarita.
