Panzanella Salad with Mozzarella and Bacon

Ever wished for more croutons than greens in your salad? Done! Using crisp-crusted baguettes really brings out the fresh and zesty flavors of this Italian salad.


  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 14 teaspoon salt (or more to taste)
  • 3 cups cubed (1/2-inch pieces) Italian or sourdough bread (with or without crust)
  • 2 12 to 3 cups diced ripe tomatoes, preferably organic heirloom varieties
  • 1 cup Organic Valley Shredded Mozzarella or Italian Blend Cheese*
  • 4 slices Organic Prairie Organic Hardwood Smoked Uncured Bacon, crisply cooked, crumbled
  • 14 cup packed fresh basil leaves, cut into thin strips


  1. Whisk together oil, vinegar and salt in a large bowl.
  2. Add bread, tomatoes, cheese, bacon and basil; toss lightly.
  3. Serve immediately. Serve with freshly ground black pepper if desired.

*Or, cut 1 cup of small cubes from a block of Organic Valley Mozzarella Cheese
