Saute the carrots, celery, and onions lightly in butter. Add the garlic; wait a few minutes, then add the chicken stock, quinoa, and lentils. Simmer. When the lentils are tender, add the spices and chicken. Simmer until the chicken is cooked throughout. Add the diced tomato, simmer and taste. Adjust spices if desired.
