A high powered organic kick to the classic mac-n-cheese.
In a medium heavy saucepan, boil water for the Annie's Organic Mac and Chesse shells. While the shells are boiling...In a large skillet, saute zucchini, mushrooms and broccoli florets in a touch of Organic Valley Unsalted Butter.
When the veggies are tender, add Organic Valley Lowfat Sour Cream (yum), frozen peas, and if desired ...pre-cooked Organic Valley poultry (leftover chicken or turkey breasts is savory in this dish). Stir well.
Add Annie's Cheese Packet to the sauteed veggies and sour cream mixture, stir until completely incorporated.
By now the shells should be done cooking! Drain and rinse under cold water (to prevent sticking). Add the shells to the skillet goodies and stir gently and allow to simmer for 4-6 minutes or until the sauce has thickened to desired consistancy. Sprinkle with Organic Valley Parmesan Cheese and enjoy!
Serve with a grilled Organic Valley Chicken Breast, green salad and a tall glass of Organic Valley Milk.
Kids in the Kitchen:"Attention all veggie choppers...your presence is requested in the kitchen." For children 4-6 years old, zucchini is a safe vegetable to start the process of learning to slice. And for the younger set of kitchen helpers..pulling broccoli florets (or baby trees) will keep their hands busy!
***Non-Vegetarians/Omnivores: Try adding pre-cooked Organic Valley Chicken or Turkey Breast to Power Mac Attack, it's a savory way to boost protein and keep the fat to a minimum.
