Omega-3 rich salmon meets sweet Waldorf Salad in a tasty combination.
Drain canned pink salmon in a colander placed in the sink. Allow a few minutes for oil or water to drain.
In a medium mixing bowl, gently break salmon apart using a fork. Stir in apple, celery, walnuts, and raisins; set aside.
For dressing, in a small mixing bowl combine sour cream, mayonnaise, and lemon juice. Add to salmon/waldorf mixture, lightly tossing.
To serve, line bowl or container with lettuce, then sprinkle grated cheese over lettuce. Spoon salmon mixture on top and garnish with apple slices or fresh red grapes if desired.
