Sos chrzanowy zimny is the name for a traditional chilled sauce from Poland. In this version, organic sour cream is the nutrient-rich base for punchy horseradish and tart apple. The sauce is simple, but spunky, and pairs perfectly with ham, sausages or smoked fish or chicken, or as a dressing for cooked, diced beets or egg salad.
One thing to remember about horseradish: the fresher it is, the bigger the punch it gives. So start with the smaller amount in this recipe and then add more as you like.
1. Combine sour cream and horseradish in a bowl.
2. Peel the apple and chop it very finely, or grate it on the largest holes of a grater. Add apple to sour cream mixture. Stir in salt and pepper to taste.
3. Cover and chill until serving time.
