Puree strawberries and sugar in food processor or blender. Add Organic Valley Cultured Lowfat Buttermilk and process until smooth and creamy. Pour into 8x11 glass dish. Cover & place in freezer. Freeze mixture until firm throughout (about 3 hours or so).
Spoon gelato into a food processor or ice cream maker and process until desired consistancy. Allow gelato to soften at room temperature for 5 minutes prior to service.
Gelato can be prepared 3 days ahead. Keep frozen.
