A low carb protein powerhouse salad with crunchy veggies and oodles of savory flavors.

Ingredients

  • 12 onion, minced (small)
  • 12 red bell pepper, chopped
  • 1 stick celery, minced
  • 12 cucumber, peeled and chopped
  • 12 ounces black beans, strained and rinsed
  • 14 teaspoon ground black pepper
  • 12 teaspoon garlic powder
  • 1 teaspoon curry powder
  • 12 teaspoon dill weed
  • 12 ounces Organic Valley Lowfat Cottage Cheese

Directions

Wash and prepare vegetables as directed. Combine vegetables and beans in a medium mixing bowl. Fold spices and Organic Valley Cottage Cheese into the mixure. Chill for 20 minutes and enjoy!
Summer Cottage Salad is a great source of protein, combined with carminative (digestive) spices, and cooling cucumber! Children love it, too!
