Sweet and Spicy Dipping Sauce

Use this as a dipping sauce for Asian Spring Rolls or add some to stir-fries, fried rice or cold rice noodles. The recipe yields about 1 cup.

Note: Thai peppers are tiny, profoundly hot peppers. Mash them with the garlic in a mortar and pestle, or use the flat of a knife--a blender doesn’t work as well. Beware the fiery juice on your fingers. Use less or more according to your family’s tastes.


  • 4 tablespoons sugar (or 3 tbsp honey)
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce (bottled, nam pla)
  • 1-2 garlic cloves, mashed to a paste
  • 2 Thai chilis, mashed into bits (or other hot peppers)


Boil sugar with 1 cup water for 2 minutes. Cool. Stir in remaining ingredients.
