Do you know what will make a roomful of football fans stand up and cheer? (Besides the obvious, that is.) A platter piled high with these hot-off-the-griddle sandwiches. Assemble them before the game and keep them wrapped in the refrigerator until half-time. They cook up in about the same amount of time as it takes for the gang to replenish their beers.
1. Brush one side of each of the bread slices with olive oil.
2. Spread pizza sauce on other side of each of the bread slices. Sprinkle lightly with dried oregano. Make a sandwich, oiled sides out, with provolone and pepperoni (or mushrooms).
3. Heat a large, heavy skillet or cast iron griddle over medium flame 5-10 minutes. Grill sandwiches until both sides are browned and cheese is melted. Serve pronto.
