Do you know what will make a roomful of football fans stand up and cheer? (Besides the obvious, that is.) A platter piled high with these hot-off-the-griddle sandwiches. Assemble them before the game and keep them wrapped in the refrigerator until half-time. They cook up in about the same amount of time as it takes for the gang to replenish their beers.

  • 8 slices Italian-style bread
  • olive oil
  • 1 cup canned pizza sauce
  • dried oregano
  • 6-8 ounces Organic Valley Provolone Cheese, sliced
  • 2-3 ounces Organic Prairie Pepperoni or 1 cup sauteed fresh mushrooms

1. Brush one side of each of the bread slices with olive oil.

2. Spread pizza sauce on other side of each of the bread slices. Sprinkle lightly with dried oregano. Make a sandwich, oiled sides out, with provolone and pepperoni (or mushrooms).

3. Heat a large, heavy skillet or cast iron griddle over medium flame 5-10 minutes. Grill sandwiches until both sides are browned and cheese is melted. Serve pronto.

I add Garlic powder to the bread after I flip it and it "toasts" on the hot bread. Extra yummy.

I also make open face "mini pizzas with or without the tomato sauce, I sometimes use mozzarela cheese, and you can use any sandwich bread for it. I sometimes use italian spices instead of oregano only and put it in the oven... You can top it with you favorite pizza toppings. The kids of all sizes love it
