2 pounds medium red potatoes
1 cup Organic Valley Heavy Whipping Cream
4 tablespoons Organic Valley Cultured Butter
1/4 cup Organic Valley Sour Cream
4 tablespoons Organic Valley Cream Cheese
2 tablespoons chives, sliced thin
salt to taste
pepper to taste
1. ) Remove cream cheese from the fridge and allow to soften at room temperature for at least 20 minutes.
2.) Wash the potatoes and cut them into quarters with the skin left on, then boil them until a toothpick can be passed through without encountering resistance (about 20-30 minutes).
3.) Meanwhile, put the cream and butter in a separate saucepan and simmer, stirring occasionally, until butter is fully incorporated.
4.) Strain the water from the boiled potatoes and add the steeped cream and butter mixture, sour cream, and softened cream cheese. Using a potato masher, crush the potatoes until all ingredients are evenly combined.
5. ) Add salt and pepper to taste, and garnish with sliced chives.
