Autumn's Awesome Buttermilk Biscuits

Ingredients:

2 cups all-purpose flour (or try spelt)
1 tablespoon sugar
2 teaspoons baking powder
1/3 teaspoon sea salt
10 tablespoons Organic Valley Unsalted Cultured Butter (chilled and cut into pieces)
2/3 cup Organic Valley Cultured Lowfat Buttermilk (chilled)

Instructions:

Preheat oven to 375°F.

Sift flour, sugar, baking powder and salt into large mixing bowl. Add butter and rub in with fingertips until mixture resembles coarse meal.

Gradually add Organic Valley Cultured Lowfat Buttermilk, tossing with fork until large moist clumps form. Gather biscuit dough into a ball and roll out onto a surface dusted generously with flour.

Cut into 3-inch rounds & transfer onto a baking sheet lined with parchment.

Bake biscuits until tester inserted into center comes out dry, about 20 minutes (biscuits will be pale). Transfer biscuits to rack and cool to lukewarm.

To store biscuits, allow them to cool, and wrap tightly in aluminum foil and store at room temperature. Before serving, rewarm in 350°F oven for 5 minutes.

Fresh ground flour,half spelt, half soft spring wheat, cut with a heart shape and baked at 425 for only 10 minutes has these yummy biscuits coming out moist and golden brown! My girls say, "These are the best yet, Mom!"

These biscuits were even delicious the next day without added butter on them!

If you follow these directions without being very gingerly with the dough, you will get a heavy mess. If you use half shortening and half butter you will find a lighter biscuit. My only point is to be gentle when handling the dough;form the dough on the board without using a fork.

I used 1 tsp salt instead of 1/3 and I used 1 cup buttermilk instead of 2/3. When I did this it made the scones savory so I served them with lamb stew which worked out perfectly!
