Flower Power Compound Butter



Almost any manner of intensely flavored tidbits--fresh or dried herbs, roasted vegetables, edible flowers--can be suspended in softened butter to create a versatile spread.

Ingredients:

1/2 pound Organic Valley European-Style Cultured Butter, at room temperature
1/2 cup chopped edible flower petals (signet marigold, bee balm, chive flowers, etc.)

Instructions:

Use a wooden spoon or food processor to blend butter and flower petals until mixture is creamy.

Transfer butter to three or four sheets of waxed paper and roll each one up into the shape of a log. Twist the ends of each log tightly. Place in a plastic bag and chill (or freeze).

Slice the chilled butter into rounds and use on pancakes, waffles, toast, grilled fish, chicken, etc. (If you have frozen the butter, thaw it in the refrigerator before slicing it.)

Serving Suggestions:

The softened butter also may be folded into mashed potatoes, hot rice or pasta.
