Egg Nog Cream Pie

*A 2008 Celebrate Organic Holiday Recipe Contest Winner!*

Submitted by Lenore Gulyas, Boulder, CO

Says Lenore, "My daughter and I were making some Meringue cookies for some friends and my recipe calls for 6 egg whites. I did not want to throw the 6 egg yolks away so I decided to make some pudding.  When I went to the refrigerator to get the milk I saw the egg nog and decided to use it instead of the milk, and use it for an egg nog cream pie with whipped cream on top. The recipe I have for pudding calls for only 2 egg yolks, but I decided to use all 6 yolks, since I was using egg nog. I thought it would make a very rich pudding.  We shared it with some neighbors and it was a great hit. Everyone loved it and wanted the recipe. I told them unfortunately they would have to wait until I entered the contest."

Servings: 8

Ingredients:

2 tablespoons sugar
2 tablespoons cornstarch
1/8 tsp salt

3 cups Organic Valley Egg Nog, divided
6 Organic Valley egg yolks
2 tsp vanilla

1 graham cracker pie shell (8 inch)
1 pint Organic Valley Heavy Whipping Cream

Instructions:

Place the sugar, cornstarch and salt in a 3 quart heavy sauce pan and whisk together. Whisk egg yolks with 1/4 cup egg nog in a small bowl. Then add the egg nog mixture to the dry ingredients in the sauce pan and whisk together. Add 1 3/4 cups of egg nog to the sauce pan and whisk well. Cook on medium high heat until the mixture thickens, stirring constantly.

Remove from heat and add vanilla and remaining 1 cup egg nog; whisk well. Pour into the graham cracker pie shell. Refrigerate. Then make the whipped cream and place on top of the pie when chilled. Enjoy!
