Chocolate-Dipped Strawberries

So much pleasure, so little effort!

For the best treats, use tender-fleshed, in-season organic strawberries here, not the hard-hearted types shipped from afar.

Ingredients:

Up to 2 quarts whole, stem-on fresh organic strawberries
8 ounces semisweet organic chocolate, cut into small pieces (or substitute chocolate chips)
4 tablespoons Organic Valley Butter, cut into small pieces
Optional: finely chopped pecans

Instructions:

1. Gently rinse strawberries and then let them dry on paper towels. Line a large tray with waxed paper. Place chocolate and butter in a double boiler over simmering water; heat until ingredients have melted. Remove from heat and stir until smooth.

2. Dip strawberries into the chocolate one at a time, leaving upper third of each berry uncoated. If desired, dip again (tips only) into pecans. Place dipped berries on lined tray. Chill in refrigerator to let the chocolate set, at least 10 minutes. Keep the berries chilled until ready to serve.

Note: Excess melted chocolate can be refrigerated and melted again for later use.
