Cucumber Watercress Salad



Honor the water element with this refreshing twist on the cooling classic cuke salad.

Ingredients:

1 cup Organic Valley Sour Cream
1/3 cup celery (chopped fine)
6 large cucumbers (cut into thin slices)
3 tablespoons scallions (minced)
3 tablespoons watercress (washed well and chopped)
sea salt and pepper (to taste)

Instructions:

Wash and dice celery into small pieces. Peel or score cucumbers and cut diagonally into thin slices.

In a medium sized mixing bowl, toss together celery, cukes, Organic Valley Sour Cream, scallions and watercress. Add sea salt and pepper to taste.

Note:

This pallette cleanser should be kept quite simple as a representative of the water element. The seeds of the cucumbers are left intact to offer more water and allow guests to experience the "mother" of the plant.

 

If watercress is unavailable, try fresh watermint or small quantities of spearmint.

 

It's tempting to add fresh garlic, yet it clouds the pallette and offers a strong earth feel.
