Total Time: 0:30
Servings: 4
Ingredients:
2 large Organic Valley Boneless Skinless Chicken Breasts (thawed)
1/2 medium onion (chopped)
1/2 cup water (filtered)
1/2 pound baby carrots
2 medium squash, summer (chopped)
2 cups broccoli florets (rinsed and drained)
1/3 teaspoon black pepper (ground)
1 teaspoon garlic (granulated)
1 tablespoon tamari soy sauce
1/2 teaspoon chili powder
1/3 cup sesame seeds (raw)
2 teaspoons sesame oil
1 medium red bell pepper (julienned)
Instructions:
Sear Organic Valley Boneless Skinless Chicken Breasts in (hot pepper) sesame oil for 3 minutes on each side. Reduce heat to medium-low and add onion, tamari and water. Cover and let cook for 5 minutes each side. Uncover and add carrots, yellow squash, red bell pepper, broccoli and spices. Stir and replace cover until chicken is cooked throughout and vegetables are tender. Remove from heat and sprinkle with raw sesame seeds (a great source of vitamin E and essential fatty acids). Serve over steamed basmati or brown rice, and enjoy!!!!

This is delicious!!! We didn't add in the squash but just added more carrots instead. Also, we served it over brown rice and it was wonderful! :)
