Monday Night Nachos!
Mix up your Monday night with this fun family dinner or festive football feast!

Ingredients:
1 pound Organic Prairie Ground Beef
1 cup onions (minced)
sea salt and black pepper (to taste)
1 tablespoon chili powder
1 teaspoon cumin
1 tablespoon fresh garlic (peeled and minced)
1/2 cup salsa
1/3 cup water
1 cup Organic Valley Mexican Shredded Cheese Blend
1 cup Organic Valley Shredded Cheddar Cheese
1 cup lettuce (shredded)
1 cup Roma tomatoes (seeded and chopped)
1/2 cup Organic Valley Sour Cream
1 tablespoon cilantro (optional and highly recommended)
Instructions:
In a large heavy skillet pan, over medium-high heat, brown the ground beef for 2-3 minutes. Add the onions and continue to brown for 3 to 4 minutes. Stir in chili powder, cumin, and
garlic. Add the salsa and water. Bring the liquid to a simmer and allow to simmer for 2 to 3 minutes, or until the liquid reduces by half. Remove the pan from the heat and allow to cool slightly.
Lay your favorite tortilla chips on a large platter. Spoon the beef mixture over the chips and sprinkle cheeses over the meat. Top the cheese with lettuce, tomatoes, sour cream and cilantro.
Serving Suggestions:
Serve with a refreshing micro-brew beer, lemonade spritzer, or a lime margarita.
