No-Cook Cranberry Relish



Cranberry relish is a must-serve side dish during the American holidays. This one is sweet-tart, gorgeous and easy, easy, easy. You'll never go back to the canned kind.

Ingredients:

1 large or 2 small thin-skinned seedless oranges
12-16 ounces fresh cranberries
1/2-2/3 cup sugar
2-3 tablespoons orange or cranberry liqueur (optional)

Instructions:

Wash the orange and cut it into quarters. Slice off and discard the white pith that runs along the edge of each quarter. Cut the quarters in half and place in food processor with remaining ingredients. Use the pulse button to chop the ingredients--not too coarsely and not too finely. Let mixture stand 15 minutes, stirring occasionally, to dissolve the sugar. Chill before serving. Makes 8 servings.
