Summer Cottage Salad

Ingredients:
1/2 small onion (minced)
1/2 medium red bell pepper (chopped)
1 medium celery ribs (minced)
1/2 medium cucumber (peeled and chopped)
1 can black beans (strained and rinsed)
1/4 teaspoon black pepper (ground)
1/2 teaspoon garlic powder
1 teaspoon curry powder
1/2 teaspoon dill weed
12 ounces Organic Valley Lowfat Cottage Cheese
Instructions:
Wash and prepare vegetables as directed. Combine vegetables and beans in a medium mixing bowl. Fold spices and Organic Valley Cottage Cheese into the mixure. Chill for 20 minutes and enjoy!
Summer Cottage Salad is a great source of protein, combined with carminative (digestive) spices, and cooling cucumber! Children love it, too!
