Sunny Neufchatel Schmear
Spread sunshine all over your sandwich..or dunk your favorite veggies!

Ingredients:
8 ounces Organic Valley Neufchatel Cheese
3 tablespoons celery (chopped)
1 medium scallion (chopped)
1/2 cup carrot (grated)
1/2 cup sunflower seeds
1 tablespoon fresh lemon juice
black pepper (to taste)
Instructions:
Method #1: Toss all ingredients into a food processor and blend until desired consistency.
Method #2: Combine all the prepared veggies into a medium mixing bowl. Using a hand held blender, blend for 2-3 minutes, then add lemon juice and sunflower seeds and blend until smooth. Then add the Neufchatel. Blend until desired consistency.
Serving Suggestions:
Dunk veggies into this quick dip, or simply schmear onto your favorite wrap/bread and build a Sunny Sandwich!

Kids in the Kitchen:
Kids love to grate carrots. Let them grate to their hearts' content by using a special "knuckle protector." Simply fold a washcloth in half (diagonally), wrap around knuckles (on the "half line"), and fasten with a big broccoli rubber band!
Let the wee ones press the button on the food processor and watch the veggies whiz 'round and 'round.
Try adding 1 tablespoon of flax seed oil to the schmear for more "schmearability" - and a brain boost (good Essential Fatty Acids!)
