Super Simple Slaw
Vibrant shades of ruby, farm fresh crunch, this super simple slaw is a delight to munch.

Ingredients:
3 cups green cabbage leaves - shredded or chopped fine
3 cups red cabbage - shredded or chopped fine
3 medium beets - grated
3 large carrots - grated
3 medium green onions - chopped fine
1 clove fresh garlic - minced
1/3 cup Organic Valley Lowfat Sour Cream
1/4 cup mayonnaise
1 teaspoon balsamic vinegar
salt and pepper (to taste)
Instructions:
Wash and prepare the veggies, mince the garlic and toss into a large mixing bowl. Add the dressing, adjust the spices and you're done!
Serving Suggestions:
Add a handful of slivered almonds or raw sunflower seeds for an Omega crunch!
Note:
Kids in the Kitchen:
Let the kids grate or chop the cabbages, carrots, snip the green onions with a scissors, but save the beets for an adult to prepare! Kids grating beets can turn into hours of clean up and laundry, as the vibrant color of the precious beet will stain like there's no tomorrow! The upside is that the little kitchen folk will love mixing the creamy dressing! Super simple and crunchy... YUM!
