Swiss Cheese Sauce
Ingredients:
2 1/2 tablespoons Organic Valley butter
3 tablespoons flour
1 cup Organic Valley milk
1/2 cup Organic Valley half and half or heavy whipping cream
1/2 teaspoon salt
1/8 teaspoon ground white pepper
1/8 teaspoon ground nutmeg
2 dashes bottled hot pepper sauce
1/2 cup grated Organic Valley baby Swiss cheese
1/4 cup shredded Organic Valley Parmesan
Additional milk (optional)
Serving Suggestions:
1. Make a roux (which will serve to thicken the sauce): Melt butter in a saucepan. Stir in flour until well blended. Cook over low heat, stirring often, 3-5 minutes.
2. Meanwhile, combine milk, cream and seasonings and gently heat them in another pan or in the microwave oven.
3. Whisk milk mixture into roux until smooth. Simmer very gently about 10 minutes, stirring occasionally.
4. Remove from heat and add cheeses a little at a time, stirring well after each addition to melt the cheese. Thin with additional milk, if desired. Taste and add more seasonings as needed.
