Tastes-Like-Pizza Scalloped Tomatoes
Think of this dish as pizza that has morphed into another form. (And it’s easier to make, too.)
Ingredients:
2 tablespoons olive oil
2 cups day-old Italian or French bread, cut into 1/2-inch cubes
4 large organic tomatoes, seeded and cut into 1/2-inch cubes
1 tablespoon minced garlic
1 teaspoon sugar
Salt and freshly ground black pepper
1/2 cup chopped basil leaves
1/3 cup Organic Valley shredded Parmesan, divided
1/2 cup pizza sauce
Instructions:
1. Heat oven to 350 degrees. Heat a heavy skillet over medium flame. Add oil and bread cubes; toss and cook until bread is lightly browned, 8-10 minutes.
2. Add tomatoes, garlic and sugar. Cook 3 minutes, stirring often. Season to taste with salt and pepper. Stir in basil.
3. Spread tomato mixture in casserole. Sprinkle half the Parmesan evenly over the top. Drizzle with pizza sauce. Bake 25 minutes. Sprinkle on remaining parmesan; bake 5-10 minutes longer. Let stand 5 minutes at room temperature before serving.
