Windfall Quesadillas



Lots of backyard plots include an apple tree; here’s something to do with the windfalls (and it’s almost as easy as eating them straight). If you don’t have your own tree, choose from the endless varieties at orchards and farmers’ markets.

Servings: 4

Ingredients:

4 large flour tortillas
1 package (6 ounces) Organic Valley Muenster or Baby Swiss Cheese Slices
1 cup very thinly sliced apples (choose your favorite fall variety)

Instructions:

Heat a cast-iron skillet over medium flame until pan is quite hot, about 10 minutes.

Make the quesadillas one at a time: place a tortilla in the pan and spread 2 slices cheese over tortilla. Distribute apples over half the cheese. Fold tortilla in half over the apples. Heat on both sides until lightly browned.

Variation:

Sauté the apple slices in a little Organic Valley butter and stir in some honey just before they get tender. Add these to the quesadilla and serve them as a snack or dessert.
