New Mexico Red Chile Beef Enchiladas
Based in Denair, California, Rose Marie and Ward Burroughs have been Organic Valley dairy farmers since 2005. Here, Rose Marie, whose parents are from New Mexico, shares her mother’s recipe for New Mexico enchiladas—but with a twist or two. Like many family foods that get passed down through the generations, the dish retained its authentic essence yet changed with the times.
To soften the corn tortillas, for example, Rose Marie’s mother used to quick-fry them in traditional lard, but she began substituting corn oil in the 1970’s, when lard became viewed as unhealthy. “But I didn’t like using all that corn oil—there are issues about corn oil, too--so I thought of coconut oil,” says Rose Marie. She also switched from a customary flour-and-fat-based roux to arrowroot, for thickening the chile sauce.
But she still stacks—not rolls—the tortillas in the unique New Mexico style and uses only ground beef—not chicken--in the filling, and she calls the enchiladas “the number one cultural dish” in her family. “My mother would always serve pinto beans on the side for dinner, and for breakfast, we’d have a fried egg on top.”

Ingredients:
12-14 large (about 4 ounces total) dried New Mexico red chiles
1 tablespoon sea salt
3 large cloves garlic
2 tablespoons arrowroot
About 2 cups finely chopped yellow onion
About 3 cups shredded Organic Prairie Mild Cheddar
8 cups or more cups chopped or shredded lettuce
2-3 cups chopped tomatoes
2 pounds Organic Prairie Lean Ground Beef
Garlic salt
Coconut oil for frying
24 six-inch corn tortillas
Instructions:
1. Prepare the chile sauce: Remove stems and seeds from dried chiles (wear gloves while doing this and/or take special care not to rub your eyes with fingers that have touched the chiles). Rinse chile skins then combine them in a saucepan with enough water to cover them. Bring to a boil, then turn off heat and let chiles soak 15 minutes (you can place plate over chiles to keep them submerged). Drain. Combine chiles, salt, garlic, arrowroot, and 4 cups water in a blender or food processor. Blend until mixture is a smooth puree. Place puree in a 9-inch (medium-sized) cast iron pan; bring to a boil over medium heat, then lower flame and simmer 20 minutes, stirring occasionally.
2. While chile sauce is simmering, prepare the enchilada fillings and garnishes: Prepare onions, cheese, lettuce, and tomatoes as described above. Set aside in separate bowls. Heat a large, heavy skillet over medium-high flame. Add the ground beef and brown it, stirring occasionally and crumbling it. Drain off excess fat. Add garlic salt to taste. Keep meat warm.
3. Prepare enchiladas: Add coconut oil to a depth of about an inch to a medium-sized cast iron; heat over medium flame until it’s hot enough to make a tortilla bubble around the edges as soon as it is added to the oil. (Be careful not to overheat it--oil that is smoking is too hot.) To make each serving: Use tongs to dip a tortilla into the hot oil; as it starts to bubble, turn the tortilla over. The goal is to make the tortillas soft. (If they become stiff, it means you left them in the oil a little too long, but you can save and use these for a tostada, or as tortilla chips.) Drain the tortilla briefly on paper towels, if desired, then use another pair of tongs to dip the tortilla into the pan of warm chile sauce and coat it completely. (Using two sets of tongs prevents chile sauce from being dripped into the hot oil.) Place it in the center of a dinner plate. Spread about 2 tablespoons ground beef evenly across the tortilla. Sprinkle on some chopped onion and shredded cheese. Repeat this process for one or two more layers, as desired. Portion about 1 cup chopped lettuce and about 1/4 cup chopped tomatoes around the enchilada stack. Serve immediately. Continue to prepare and serve enchiladas until remaining ingredients are used up. (Alternatively, you can prepare all the enchiladas, hold them in a warm oven, then add the lettuce and tomatoes and serve them all at once.)
Note:
Rose Marie Burroughs says that the “key ingredient in this recipe is the right kind of dried chile pod.” She’s referring to the dried red New Mexico chile, an elongated pod that ranges in heat from mild to hot, and in size is typically about five to seven inches long, and about an inch and a half wide across the stem end. Bright red when fresh and ripe, and a burnished mahogany when dried, they are a regional icon, often used in the decorative stringed chile bundles known as ristras. Look for the larger ones for this recipe and even if you find ones labeled “mild,” take care when handling and cooking them, for the flesh can bother sensitive skin, and the steam that rises when cooking them can sting one’s eyes and throat.
Besides their characteristic spiciness, “chiles are also high in Vitamin C,” notes Rose Marie. In days gone by, native peoples “didn’t have a lot of fruits, so chiles were very important for health.”

For a healthier twist, you do not need oil at all if you have a cast iron pan. Turn heat to med-high and use water on the corn tortillas. Yes, water. Wet each side lightly and throw on the pan for a minute or two. This will steam the tortillas and the result is just as delicious as if you used the oil with high colesterol!

Coconut oil has no cholesterol since it comes from a vegetable source...so long as the fat isn't artifically hydrogenated it is ok
