Ingredients
2 medium Honeycrisp apples
2 tablespoons fresh lemon juice
2 cups fresh arugula
8 thin slices prosciutto, cut in half lengthwise
¼ teaspoon black pepper
16 toothpicks
Directions
- Using a sharp knife, core apples and cut into 1/4-inch thick slices. You should have approximately 16 slices. Brush apple slices with lemon juice to prevent browning.
- On a clean work surface, lay out one half-slice of prosciutto. Place 2-3 arugula leaves on the prosciutto, followed by one apple slice and one slice of cheddar. Carefully roll the prosciutto around the filling, starting from one end and rolling tightly. Secure with a toothpick.
- Repeat with remaining ingredients to create 16 total. Arrange on serving platter and top with freshly cracked black pepper. Serve immediately.
Tips
For variation, try using pear slices instead of apple, or substitute baby spinach for arugula if you prefer a milder green.
A light drizzle of balsamic glaze adds a sophisticated tangy note that pairs beautifully with the other flavors.
