Ingredients

  • 1 cup buckwheat flour
  • 1 ripe banana
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cardamom
  • fresh fruit (optional)
  • 1-2 tablespoons maple syrup
  • 1 ½ teaspoons vanilla bean paste

Directions

  1. Add flour, milk, eggs, banana, baking powder, cinnamon, nutmeg and cardamom in blender.
  2. Blend ingredients for 60 seconds on high.
  3. Cook in a well-greased waffle iron to desired level of doneness.
  4. While waffles cook, whip together whipped cream ingredients (heavy whipping cream, maple syrup and vanilla bean paste) with an electric mixer until stiff peaks form.
  5. Top your waffles with whipped cream, fresh fruit and a drizzle of maple syrup.
