Ingredients

  • 20 large, dried apricots 
  • 4 ounces blue cheese crumbles
  • 20 walnut halves 
  • 1 tablespoon honey 
  • Fresh thyme for garnish (optional) 

Directions

  1. Using a small paring knife, carefully cut a slit lengthwise down the center of each dried apricot, creating a pocket while keeping the apricot intact.

    Tips

    • If apricots are too dry and crack easily, soak them in warm water for 3-5 minutes to soften, then pat completely dry.

  2. Fill each apricot with approximately 1/2 teaspoon of blue cheese.
  3. Top each apricot with a walnut half, pressing gently to secure. Garnish with a drizzle of honey and fresh thyme, as desired.

    Tips

    • Choose plump, soft dried apricots for the best texture and easiest stuffing.

    • These appetizers can be assembled up to 4 hours ahead and refrigerated.

    • Try toasting the walnuts for 5-7 minutes first for extra nuttiness and crunch.
