Ingredients
20 large, dried apricots
4 ounces blue cheese crumbles
20 walnut halves
1 tablespoon honey
Fresh thyme for garnish (optional)
Directions
- Using a small paring knife, carefully cut a slit lengthwise down the center of each dried apricot, creating a pocket while keeping the apricot intact.
Tips
If apricots are too dry and crack easily, soak them in warm water for 3-5 minutes to soften, then pat completely dry.
- Fill each apricot with approximately 1/2 teaspoon of blue cheese.
- Top each apricot with a walnut half, pressing gently to secure. Garnish with a drizzle of honey and fresh thyme, as desired.
