Ingredients
dried apricot
20 large, dried apricots 
walnuts
20 walnut halves 
honey
1 tablespoon honey 
A small bunch of thyme.
Fresh thyme for garnish (optional)

Using a small paring knife, carefully cut a slit lengthwise down the center of each dried apricot, creating a pocket while keeping the apricot intact.

Tips

  • If apricots are too dry and crack easily, soak them in warm water for 3-5 minutes to soften, then pat completely dry.

Fill each apricot with approximately 1/2 teaspoon of blue cheese.
Top each apricot with a walnut half, pressing gently to secure. Garnish with a drizzle of honey and fresh thyme, as desired.

Tips

  • Choose plump, soft dried apricots for the best texture and easiest stuffing.

  • These appetizers can be assembled up to 4 hours ahead and refrigerated.

  • Try toasting the walnuts for 5-7 minutes first for extra nuttiness and crunch.

Can I substitute the blue cheese with another cheese?

Goat cheese, ricotta or cream cheese work well, though you'll lose the distinctive tangy flavor that makes blue cheese perfect with sweet apricots.

Are there alternatives to honey for drizzling?

Maple syrup or agave work well, or you can omit the sweetener entirely.

Can I substitute the walnuts for another nut?

Absolutely! Pecans or pistachios are also delicious.
