If apricots are too dry and crack easily, soak them in warm water for 3-5 minutes to soften, then pat completely dry.
Choose plump, soft dried apricots for the best texture and easiest stuffing.
These appetizers can be assembled up to 4 hours ahead and refrigerated.
Try toasting the walnuts for 5-7 minutes first for extra nuttiness and crunch.
Goat cheese, ricotta or cream cheese work well, though you'll lose the distinctive tangy flavor that makes blue cheese perfect with sweet apricots.
Maple syrup or agave work well, or you can omit the sweetener entirely.
Absolutely! Pecans or pistachios are also delicious.

Organic Valley’s mission is to provide a stable, sustainable pay price to farmers so they can continue farming with their families. It all started in 1988, when seven farmers got together to find a way to market their goods and make a sustainable living by producing organically derived food.

Organic Valley farms comprise more than 440,000 acres of land in the United States, and this organic acreage is home to more than 1,600 Organic Valley family farms and a whole lot of biodiversity.

July 13, 1988, was the first day that Organic Valley® cheese was made!
