Cheesy Chicken Bake with Italian Herb Mozzarella

Ingredients
4 chicken breasts
Salt and pepper
1 (24-ounce) jar red or alfredo pasta sauce
1 (12-ounce) can artichoke hearts, drained (optional)
Rice or pasta (optional)
Directions
- Preheat oven to 375 F.
- Season both sides of each chicken breast with salt and pepper to taste.
- In a 9-by-13-inch baking dish, pour in pasta sauce.
- Nestle chicken breasts into the sauce. Chicken will be only partially covered by the sauce.
- If using, place artichoke hearts around chicken.
- Bake uncovered for 35-40 minutes until internal temperature of thickest part of chicken reaches at least 165 F.
- Remove baking dish from oven and sprinkle each chicken breast with a quarter of the Italian Herb Mozzarella. Place back into oven for 5 minutes or until cheese is melted. Let chicken cool for 5 minutes before serving.
- For a heartier meal, serve over rice or pasta.
