Ingredients

  • 1 pound organic broccolini, washed, dried, and trimmed
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ lemon
  • 2 teaspoons chili crisp

Directions

  1. Preheat outdoor grill to medium (400-425 F).
  2. In a small bowl, combine the melted ghee, salt, black pepper, and garlic powder. Stir well to combine and partially dissolve the salt.
  3. Place broccolini in a large bowl. Pour ghee mixture over broccolini and toss until evenly coated.
  4. Arrange broccolini perpendicular to the grill grates. Grill for 6 to 8 minutes, turning once halfway through and again as edges char, until tender-crisp and lightly blistered.

    Tips

    • If the florets begin to darken too quickly, move broccolini to a slightly cooler section of the grill.

  5. Transfer broccolini to a serving bowl. Squeeze lemon juice over the top, add chili crisp, and toss gently. Serve immediately.

Tips

  • Slice thick stalks lengthwise to ensure even cooking.

  • Keep stalks long so they are easier to turn on the grill and less likely to fall through the grates.

Ghee has a higher smoke point than olive oil, making it ideal for high-heat grilling. It helps blister vegetables without burning and adds a rich, nutty depth that balances lemon and chili crisp.

Grill over medium heat, turning frequently to ensure even blistering. If needed, move broccolini to a cooler area. Toss with chili crisp only after grilling to prevent scorching.
